I’ll admit I don’t know much about gumbo, but when I think of this Cajun stew, I think of okra and sausage. The tub that I picked up at a joint in Saranac Lake had neither, just carrots and peppers and bits of undersized lobster wannabes in a dark roux. It was super flavorful. Problem is, I can’t seem to get over the smell of seafood. Just not a fish girl, I guess.
