Ch- Ch- Ch- Chia-Seed Pudding

If someone had told me a year ago that I was going to eat plant-based afro starters I’d have said he was off his nut. But today I did, thanks to work-buddy Lisa. (She got this recipe for chia pudding at Food & Wine.) It was one of the silliest, goopiest foods I’ve ever seen. Like a jiggly seed-dotted slurry. (I’m told it resembles tapioca.) Despite its comic appearance, and the embarrassing things it did on TV before it became a trendsetting super food, it was pretty good, in a weird sort of way. Even the bit laced with rhubarb compote.
