Potato-Chip Cookies

When I saw this recipe in Cook’s Country, I knew I had to try it. These are like super thin butter cookies, just with a bit of a crunch. Since they’re salty and buttery, you really can’t go wrong.

  1. What synchronicity. I just was reading the very same recipe and wondering if I should try it. I made something similar that used corn flakes, a cookie recipe in the King Arthur book, and they were terrible. But in all fairness, my stove when on the blink and they cooked at 450 instead of 350.

    Is this recipe worth it to try? Are the cookies really delectable? I hate wasting calories on mediocre cookies.

    • My husband called them “strange,” so I guess it’s a matter of taste. I thought they were good — super buttery — but they could use a little chocolate. (I think everything could use a little chocolate.) So if you do it, I’d say do the chocolate dip version. Let me know if you try it!
