Sopes

I picked up some masa harina last week thinking it was what I needed to make arepas — yummy-looking fried corncakes featured in 1001 Foods You Must Taste Before You Die. But it’s not the right stuff. So I tried sopes instead, which are yummy-looking fried masa cakes. They have a bit of a hollow in the center for holding goodies like beans or veggies or, what I sampled, shredded beef and cheese. They’re easy and potentially excellent. Mine didn’t quite live up to their potential, since I thought it would be fine to switch Frank’s RedHot sauce for the red chili sauce in the shredded beef filling recipe. It calls for a whole cup, so that’s definitely not a wise substitution. Unless you really, really, really like vinegar.
