Day 298


Day two of my experimentation with masa harina and I’m wishing for a personal chef again. I used this recipe for pupusas de queso — El Salvadoran cheese-stuffed masa cakes — but something must have been lost in translation. Mine should have been called poo-poosas. Plus the curtido (cabbage salad traditionally served with pupusas) was another vinegar-splosion. Most recipes I checked after the fact only called for half the amount of vinegar I used. This recipe for Pupusas con Curtido from Saveur looks more on target … will have to try again. Unless anyone knows an excellent cook looking to work in a (really) small kitchen for a stipend of (cheap) beer?
