Curried Pepitas

Pepita is just a fun south-of-the-border name for a pumpkin seed. And I’ve certainly had those before: yanked out of gutted jack o’ lanterns, rinsed of slime and roasted with a healthy dose of salt and garlic. Yum. But I’ve never tried them hulled. And I’ve definitely never currified a batch. They were okay … just a bit too different. I think I’ll stick with my homemade garlic bombs.
